Gobi with tomato

Ingredients:
- 1 small head of gobi, broken into small pieces
- 1 medium sized tomato, chopped into pretty small pieces
- 1/2 green chili, finely chopped
- fresh cilantro, chopped
- two tablespoons prefried onion
- 1 teaspoon of salt, add more if necessary
- 1/8 teaspoon of turmeric
- 1 heaped teaspoon ground coriander powder
- 1 teaspoon ginger (paste or fresh, either works, if paste, can put 1.5 teaspoons)
Instructions:
- Saute ginger and green chili in oil.
- Add onions and fry until they’re slightly darker (optional: briefly chop prefried onions in food processor to make smaller before adding to pan). This shouldn’t take long, only around 2 minutes.
- Add gobi and brown it.
- Once the gobi is slightly browned and releasing an aroma, push it to the side of the pan, add some oil, and put turmeric, ground coriander and salt in the oil.
- Let spices settle in oil for a few seconds, then mix into the gobi.
- Add chopped tomato, and stir.
- Add chopped cilantro and cook until gobi is fully cooked, cover for some of that time if necessary.
