Thai basil fish

This recipe is based on the one found online here.
Ingredients:
- 0.6 lbs of tilapia fillets (that’s just how much fish we happened to buy)
- 1/2 green bell pepper
- 1/3 white onion
- small bunch of snow peas
- 1 tbs oyster sauce
- 1 tbs lime juice
- 1/2 to 1 cup of thai basil (quantity up to you), roughly chopped
- 1/2 teaspoon sugar
- 1-2 green chillies
- 4-5 cloves of garlic, minced
- 2 tbs chicken stock
- suji (cream of wheat)
- cornstarch (if you have it)
Instructions
- Mix the oyster sauce, lime juice, garlic, chilli, sugar and chicken stock in a bowl.
- Finely chop the green bell pepper into slices and the onion into wedges.
- Put some oil in a wok and put the heat on high. Once the wok is hot, stir fry the snow peas, bell pepper and onions for two minutes.
- Add the sauce to the wok. Once it starts boiling, add in the cornstarch if desired. Once the sauce is thickened, add the chopped basil and take off the heat.
- Cover the tilapia fillets in suji, can also add salt and pepper.
- Cook in a pan with some oil for 1.5 minutes on each side or until cooked through (this time is for small, pretty thin fillets).
- Pour vegetables and sauce on top of the fish and serve. Can add more chopped thai basil on top for garnish, as well as lime wedges.
