Mughlai Chicken

Ingredients:

  • 1.5 tbsp oil
  • 1.5 onions sliced into slivers
  • 1/2 inch minced ginger
  • 2 cloves minced garlic
  • 1 lb chicken drumsticks
  • 1/8 tsp ground tumeric
  • 1/2 tsp ground cardamom
  • 1 inch cinnamon stick
  • 2 bay leaves
  • 1/2 cup plain yoghurt
  • 1 tbsp cashew nuts
  • 1/4 tsp garam masala
  • 1/2 tbsp lemon juice
  • 1 green chilli finely chopped
  • chopped cilantro for garnish

Instructions:

  1. Heat the oil and fry the onions until they’re golden
  2. Add the ginger and garlic and fry for a few more minutes (1 to 2)
  3. Add the chillies, cardamom, turmeric, cinnamon and bay leaves, fry for a minute or so
  4. Add the chicken, cooking until it’s lightly browned
  5. Add half the yoghurt, stir and then simmer for 30 minutes
  6. Dry roast the cashews, grind, and stir into the remaining yoghurt.
  7. After the 30 minutes is over, stir the yoghurt nut mix into the chicken.
  8. Add garam masala and lemon juice. Simmer uncovered for 5 minutes, to let the sauce thicken.
  9. Garnish with cilantro
