Chana masala

Ingredients:
- 1 can garbanzo beans
- 1/4 medium onion chopped
- 1/4-1/2 tsp garam masala
- 1 tsp coriander powder
- 2 cloves garlic minced
- 1/2 inch ginger chopped
- 1/2 tsp salt or to taste
- 1/2 – 1 green chili chopped
- 1/4-1/2 tsp amchoor (or can replace with lemon juice)
- 1/4 tsp haldi (tumeric)
- 1 large tomato chopped (or about 1/4-1/3 of a can of diced tomatoes)
Instructions:
- Heat oil and saute the onions until they’re golden brown
- Lower heat, add ginger and garlic, and saute for a few minutes
- Add the garam masala, coriander powder, salt and haldi and fry an additional minute or two
- Add the tomatoes and chickpeas along with the juice
- Add the pepper, amchoor or lemon juice and mix well
- Cover well and let cook about 10-15 minutes
- Uncover and let gravy reduce to liking
- Garnish with fresh tomatoes and potato wedges if you want
