Mexican-style rice

Modifications:
- Use way less oil than recipe calls for (few tablespoons, not 1/3 of a cup
- Use a little less tomato, maybe 2/3 to 3/4 of what it calls for.
- Depending on type of rice, cooking time will be longer. We used basmati, which definitely takes longer to cook
