Chickpea salad

Ingredients:

  • 1 can of chickpeas
  • 1/2 cup of greek yogurt (or regular yogurt)
  • 2 teaspoons of dijon mustard
  • 1/2 tsp of salt
  • 1/2-1 tsp of cumin powder
  • 1/2-1 tsp of coriander powder
  • 1-2 tbsp of dried dill (depending on preference)
  • lemon juice to taste (about 1/2 of a lemon)
  • chopped celery
  • chopped cilantro

Instructions:

  1. Mix everything except celery and cilantro in a bowl
  2. Take 1/2 to 3/4 of mixture and blend in magic bullet or blender until pretty mushy/creamy, but doesn’t need to be perfect
  3. Mix blended part back into bowl with whole chickpeas
  4. Add chopped celery and cilantro
  5. Adjust seasoning to taste
  6. Let sit in fridge overnight, it will become more flavorful as chickpeas and spices soak
