Chickpea salad

Ingredients:
- 1 can of chickpeas
- 1/2 cup of greek yogurt (or regular yogurt)
- 2 teaspoons of dijon mustard
- 1/2 tsp of salt
- 1/2-1 tsp of cumin powder
- 1/2-1 tsp of coriander powder
- 1-2 tbsp of dried dill (depending on preference)
- lemon juice to taste (about 1/2 of a lemon)
- chopped celery
- chopped cilantro
Instructions:
- Mix everything except celery and cilantro in a bowl
- Take 1/2 to 3/4 of mixture and blend in magic bullet or blender until pretty mushy/creamy, but doesn’t need to be perfect
- Mix blended part back into bowl with whole chickpeas
- Add chopped celery and cilantro
- Adjust seasoning to taste
- Let sit in fridge overnight, it will become more flavorful as chickpeas and spices soak
