Divya Aunty’s Potato Leek Soup

Ingredients:
- 3 red potatoes
- 1 leek, chopped cross sectionally
- olive oil
- 3-4 garlic cloves
- oregano
- basil
- thyme
- 1/4 tsp crushed red pepper (less if you don’t like spicy)
Instructions:
- Saute garlic in olive oil
- Once garlic aroma has started, add red pepper and herbs (can just do dry italian herb mix if easier)
- Add chopped leeks and keep sauteing until leeks soften a bit
- Add potato, cubed, mix and let cook with lid on for 3 minutes
- Add salt, and then keep letting it cook with lid on until potatoes are 3/4 of the way cooked
- Heat water separately, and then add to pot (can also use vegetable stock instead), and cook until potatoes a desired texture
