July 24, 2018 – Ginger Scallion Fish and Fried Rice

Cantonese Steamed Fish – A 20 Minute Recipe – The Woks of Life
Modifications:
- Added 2 teaspoons of rice wine to the sauce.
- Put 1/4 teaspoon of sugar instead of 1/8.
- Next time steam the tilapia for a little less than 10 min, it was just a little overcooked.
Fried Rice:
- Cook 3 teaspoons minced garlic and 1 finely chopped green chili in hot oil
- Add 1/2 a chopped onion to the oil, as well as white parts of the spring onion, sauté for 2 minutes or so on high heat.
- Add the other vegetables (we used snap peas and carrots).
- Add two eggs, scramble for 30 seconds, and then add the 2 cups of cooked rice
- Add the sauce. We used 2 tablespoons of soy sauce to keep it vegetarian, next time try 1.5 tablespoons of soy sauce and 1.5 of oyster sauce, or using fish sauce.
- Added 1 teaspoon of sugar, 1/2 teaspoon of pepper (could put slightly less next time, or try white pepper?), and juice from 1/2 of a lime.
- Added finely chopped tomato and green part of scallions, cooked for a minute or two more on high heat.
- Garnished with cilantro (next time add crushed peanuts or cashews too?)
