Mughlai Chicken

Ingredients:
- 1.5 tbsp oil
- 1.5 onions sliced into slivers
- 1/2 inch minced ginger
- 2 cloves minced garlic
- 1 lb chicken drumsticks
- 1/8 tsp ground tumeric
- 1/2 tsp ground cardamom
- 1 inch cinnamon stick
- 2 bay leaves
- 1/2 cup plain yoghurt
- 1 tbsp cashew nuts
- 1/4 tsp garam masala
- 1/2 tbsp lemon juice
- 1 green chilli finely chopped
- chopped cilantro for garnish
Instructions:
- Heat the oil and fry the onions until they’re golden
- Add the ginger and garlic and fry for a few more minutes (1 to 2)
- Add the chillies, cardamom, turmeric, cinnamon and bay leaves, fry for a minute or so
- Add the chicken, cooking until it’s lightly browned
- Add half the yoghurt, stir and then simmer for 30 minutes
- Dry roast the cashews, grind, and stir into the remaining yoghurt.
- After the 30 minutes is over, stir the yoghurt nut mix into the chicken.
- Add garam masala and lemon juice. Simmer uncovered for 5 minutes, to let the sauce thicken.
- Garnish with cilantro
