Roasted cauliflower with yogurt tahini sauce

Ingredients for cauliflower:

  • 1 head cauliflower
  • 1/4 cup oil
  • 1 heaped tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4-1/2 tsp paprika
  • 1/4-1/2 tsp turmeric
  • 1/4 tsp salt
  • 1/2-1 tsp dry dill
  • chopped cilantro

Ingredients for sauce:

  • 1 cup greek yogurt
  • 2 tablespoons tahini
  • 2-3 tbsps fresh lemon juice
  • 1/4 tsp salt
  • 1/2 tsp cumin powder
  • 1/4 tsp sumac
  • harissa powder to taste
  • water

Instructions:

  1. Preheat oven to 375 degrees Fahrenheit, with baking sheet in the oven
  2. Wash and break cauliflower into 1-1.5 inch florets
  3. Mix oil and spices for cauliflower, and then toss cauliflower in the oil and spice mix
  4. Once the oven is hot, put cauliflower in for 30 minutes, making sure to move them around a bit after 15 minutes
  5. While the cauliflower is cooking, mix all the sauce ingredients, and then add water until desired consistency
  6. Once cauliflower is cooked, drizzle with sauce and olive oil, and garnish with cilantro and/or sesame seeds
