Thai basil fish

Thai basil fish

This recipe is based on the one found online here.

Ingredients:

  • 0.6 lbs of tilapia fillets (that’s just how much fish we happened to buy)
  • 1/2 green bell pepper
  • 1/3 white onion
  • small bunch of snow peas
  • 1 tbs oyster sauce
  • 1 tbs lime juice
  • 1/2 to 1 cup of thai basil (quantity up to you), roughly chopped
  • 1/2 teaspoon sugar
  • 1-2 green chillies
  • 4-5 cloves of garlic, minced
  • 2 tbs chicken stock
  • suji (cream of wheat)
  • cornstarch (if you have it)

Instructions

  1. Mix the oyster sauce, lime juice, garlic, chilli, sugar and chicken stock in a bowl.
  2. Finely chop the green bell pepper into slices and the onion into wedges.
  3. Put some oil in a wok and put the heat on high. Once the wok is hot, stir fry the snow peas, bell pepper and onions for two minutes.
  4. Add the sauce to the wok. Once it starts boiling, add in the cornstarch if desired. Once the sauce is thickened, add the chopped basil and take off the heat.
  5. Cover the tilapia fillets in suji, can also add salt and pepper.
  6. Cook in a pan with some oil for 1.5 minutes on each side or until cooked through (this time is for small, pretty thin fillets).
  7. Pour vegetables and sauce on top of the fish and serve. Can add more chopped thai basil on top for garnish, as well as lime wedges.
