Lamb Koftas

For the Kofta:
Ingredients:
- 1 lb minced lamb
- 1/2 onion finely chopped
- 2-3 cloves of garlic
- 1/2 inch piece of ginger
- salt to taste, about 1 tsp per lb
- 1/2 tsp coriander powder
- 1/4 tsp cumin powder
- garam masala
- green chilli to taste
Instructions:
- Grind the onion, garlic, ginger and chillies into a paste
- Add the paste and dry spices to the meat
- Mix well and make into 1/2-1 inch balls
- Cook/pressure cook in sauce once sauce is ready (see below)
For the sauce:
Ingredients:
- 2-3 medium onions, sliced
- 1 large tomato chopped, then ground in food processor
- salt to taste
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/4 tsp cumin powder
- 1/2 tsp ginger paste
- 1/2-1 tsp minced garlic
- chopped dhaniya (cilantro) leaves
- garam masala
- 4-5 tsp oil
Instructions:
- Heat oil in pan, add the ginger, garlic and onions and fry briefly, until onions beige or darker if using prefried onions
- Add the ground tomato and dry spices and simmer for a bit
- Add the meatballs to the curry and pressure cook
- Sprinkle with garam masala and dhaniya (cilantro)
