Three cup chicken

Ingredients:
- 1.5 lbs chicken
- 1/4 cup shaoxing wine
- 2 tablespoons sesame oil
- 1.5 teaspoons sugar
- 1/8 cup dark soy sauce
- 1 tablespoon light soy sauce
- 1/8 cup water
- 6 cloves garlic (or more if you like)
- 1-2 inches of ginger (depending on preference)
- 4-5 stalks scallions
- thai basil (to taste)
Instructions:
- Chop garlic, ginger, and scallions
- Saute garlic, ginger and white part of scallions in half of the sesame oil on medium heat
- Mix shaoxing wine, soy sauce, sugar, water and remaining sesame oil in bowl
- Once garlic, ginger etc have been sauteeing for couple of minutes, add chicken and brown on high heat (3-4 minutes)
- Add sauce mixture to chicken, and continue cooking on very high heat until the sauce has reduced and is thick and sticky (about 5 minutes), and chicken is cooked. For large pieces of chicken, it may help to cover the mixture first, to cook the chicken a little more before you start reducing the sauce. For small pieces of chicken, no need to cover the mixture at all.
- Turn off heat and mix in green part of scallions and thai basil
To try next time: Might be interesting to try adding some red onion for texture.
